CORNMEAL CAKE WITH MACERATE BERRIES

The cornmeal gives this summery dessert a rustic, Country-style flavor.

INGREDIENTS:

Cake:

1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup (1 stick) butter, at room temperature
1 cup sugar
2 teaspoons grated orange rind
1 teaspoon vanilla extract
2 eggs
1/3 cup yellow cornmeal
1/2 cup 2% reduced-fat milk

Berries:

1 cup each strawberries, blueberries and raspberries
1/4 cup sugar, or to taste
1/2 cup freshly squeezed orange juice

DIRECTIONS:

To prepare cake: preheat oven to 350F. Grease a 9-inch round cake pan.

Combine flour, baking powder and salt.

Combine butter, sugar, orange rind and vanilla in a large bowl; beat with a mixer at medium speed until evenly blended. Add eggs one at a time, beating after each addition. Reduce speed to low and add flour mixture and cornmeal alternately with milk, beating just until evenly incorporated. Scrape into prepared pan, spreading evenly.

Bake 30 minutes or until a tester inserted in the middle comes out clean. Cool in pan on wire rack.

To prepare berries, mash berries in a large bowl. Add sugar and orange juice and mix gently. Serve with cake.

MEXICAN BLACK BEAN PIZZA

For your vegetarian supper of the week, try this Mexican Black Bean Pizza. Loaded with protein, it has plenty of carbohydrates, and lots of flavor. If your family enjoys hot and spicy pizza, add a little extra pepper sauce. Pass the sour cream-salsa sauce at serving time. And sit back and enjoy this great meal.

INGREDIENTS:

1 10-ounce package refrigerated pizza dough
1 15-ounce can black beans, rinsed and drained
2 tablespoons snipped fresh cilantro or parsley
2 tablespoons salsa
1 teaspoon ground cumin
1/4 teaspoon bottled hot pepper sauce
2 cloves garlic, quartered
1-1/2 cups shredded Cojack or cheddar cheese (6 ounces)
1/2 cup chopped red sweet pepper
1/4 cup sliced green onion
1/2 cup dairy sour cream
2 tablespoons salsa

DIRECTIONS:

Lightly grease an 11- to 13-inch pizza pan. Unroll pizza dough and transfer to greased pan, pressing dough out with your hands. Build up edges slightly. Prick generously with a fork. Bake in a 425 degree F oven for 7 to 10 minutes or until lightly browned.

Meanwhile, in a blender container or food processor bowl combine black beans, cilantro or parsley, 2 tablespoons salsa, cumin, hot pepper sauce, and garlic. Cover and blend or process until smooth, stopping to scrape down sides if necessary.

Spread bean mixture over hot crust. Sprinkle with Cojack or cheddar cheese, chopped red sweet pepper, and green onion. Bake about 10 minutes more or until cheese melts and pizza is heated through.

In a small bowl combine sour cream and 2 tablespoons salsa. Serve pizza with sour cream mixture. Makes 4 servings

HAPPY EASTER ALL..DO YOU BELIEVE IN EASTER?

This is too wonderful not to share........I hope you have a Happy and Blessed Easter!

Edith Burns was a wonderful Christian who lived in San Antonio, Texas. She was the patient of a doctor by the name of Will Phillips. Dr.Phillips was a gentle doctor who saw patients as people. His favorite patient was Edith Burns.

One morning he went to his office with a heavy heart and it was because of Edith Burns..
When he walked into that waiting room, there sat Edith with her big black Bible in her lap earnestly talking to a young mother sitting beside her.

Edith Burns had a habit of introducing herself in this way: "Hello, my name is Edith Burns. Do you believe in Easter?" Then she would explain the meaning of Easter, and many times people would be saved.

Dr. Phillips walked into that office and there he saw the head nurse, Beverly.
Beverly had first met Edith when she was taking her blood pressure Edith began by saying, "My name is Edith Burns. Do you believe in Easter?

Beverly said, "Why yes I do."

Edith said, "Well, what do you believe about Easter?"

Beverly said, "Well, it's all about egg hunts, going to church, and dressing up.." Edith kept pressing her about the real meaning of Easter, and finally led her to a saving knowledge of Jesus Christ.

Dr. Phillips said, "Beverly, don't call Edith into the office quite yet. I believe there is another delivery taking place in the waiting room.

After being called back in the doctor's office, Edith sat down and when she took a look at the doctor she said, "Dr. Will, why are you so
sad? Are you reading your Bible? Are you praying?"

Dr. Phillips said gently, "Edith, I'm the doctor and you're the patient." With a heavy heart he said, "Your lab report came back and it says you have cancer, and Edith, you're not going to live very long."

Edith said, "Why Will Phillips, shame on you. Why are you so sad? Do you think God makes mistakes? You have just told me I'm going to seemy precious Lord Jesus, my husband, and my friends. You have just told me that I am going to celebrate Easter forever, and here you are having difficulty giving me my ticket!"

Dr. Phillips thought to himself, "What a magnificent woman this Edith Burns is!"
Edith continued coming to Dr. Phillips. Christmas came and the office was closed through January 3rd. On the day the office opened, Edith did not show up.

Later that afternoon, Edith called Dr. Phillips and said she would have to be moving her story to the hospital and said, "Will, I'm very near home, so would you make sure that they put women in here next to me in my room who need to know about Easter.."

Well, they did just that and women began to come in and share that room with Edith. Many women were saved. Everybody on that floor from staff to patients were so excited about Edith, that they started calling her Edith Easter; that is everyone except Phyllis Cross, the head nurse.

Phyllis made it plain that she wanted nothing to do with Edith because she was a "religious nut". She had been a nurse in an army hospital.
She had seen it all and heard it all. She was the original G.I. Jane. She had been married three times, she was hard, cold, and did
everything by the book.

One morning the two nurses who were to attend to Edith were sick.

Edith had the flu and Phyllis Cross had to go in and give her a shot. When she walked in, Edith had a big smile on her face and said,
"Phyllis, God loves you and I love you, and I have been praying for you."

Phyllis Cross said, "Well, you can quit praying for me, it won't work. I'm not interested."

Edith said, "Well, I will pray and I have asked God not to let me go home until you come into the family."

Phyllis Cross said, "Then you will never die because that will never happen, and curtly walked out of the room.

Every day Phyllis Cross would walk into the room and Edith would say, "God loves you Phyllis and I love you, and I'm praying for you."

One day Phyllis Cross said she was literally drawn to Edith's room like a magnet would draw iron. She sat down on the bed and Edith said, "I'm so glad you have come, because God told me that today is your special day"

Phyllis Cross said, "Edith, you have asked everybody here the question, "Do you believe in Easter but you have never asked me."

Edith said, "Phyllis, I wanted to many times, but God told me to wait until you asked, and now that you have asked." Edith Burns took her
Bible and shared with Phyllis Cross the Easter Story of the death, burial and resurrection of Jesus Christ. Edith said, "Phyllis, do you
believe in Easter? Do you believe that Jesus Christ is alive and that He wants to live in your heart?"

Phyllis Cross said, "Oh I want to believe that with all of my heart, and I do want Jesus in my life "Right there, Phyllis Cross prayed and
invited Jesus Christ into her heart. For the first time Phyllis Cross did not walk out of a hospital room, she was carried out on the wings of angels.

Two days later, Phyllis Cross came in and Edith said, "Do you know what day it is?" Phyllis Cross said, "Why Edith, it's Good Friday."

Edith said, "Oh, no, for you every day is Easter. Happy Easter Phyllis!"

Two days later, on Easter Sunday, Phyllis Cross came into work, did some of her duties and then went down to the flower shop and got some Easter lilies because she wanted to go up to see Edith and give her some Easter lilies and wish her a Happy Easter.

When she walked into Edith's room, Edith was in bed. That big black Bible was on her lap. Her hands were in that Bible. There was a sweet
smile on her face. When Phyllis Cross went to pick up Edith's hand, she realized Edith was dead. Her left hand was on John 14: "In my
Father's house are many mansions. I go to prepare a place for you, I will come again and receive you to Myself, that where I am, there you
may be also." Her right hand was on Revelation 21:4, "And God will wipe away every tear from their eyes, there shall be no more death nor
sorrow, nor crying; and there shall be no more pain, for the former things have passed away."

Phyllis Cross took one look at that dead body, and then lifted her face toward heaven, and with tears streaming down here cheeks, said,
"Happy Easter, Edith - Happy Easter!"

Phyllis Cross left Edith's body, walked out of the room, and over to a table where two student nurses were sitting. She said, "My name is
Phyllis Cross.. Do you believe in Easter?"

If you believe in Easter, forward this on. God works in wonderful ways, and to believe in his power is to truly be free. If Jesus had e-mail, he'd do the same for you.
Actually, maybe He just did)

YOU DO MAKE A DIFFERENCE!

Who You Are Makes A Difference

A teacher in New York decided to honor each of her seniors in high school by telling them the difference they each made.
Using a process developed by Helice Bridges of Del Mar, California, she called each student to the front of the class, one at a time.
First she told them how the student made a difference to her and the class. Then she presented each of them with a blue ribbon imprinted with gold letters which read, "Who I Am Makes a Difference."
Afterwards the teacher decided to do a class project to see what kind of impact recognition would have on a community.
She gave each of the students three more ribbons and instructed them to go out and spread this acknowledgment ceremony.
Then they were to follow up on the results, see who honored whom and report back to the class in about a week.
One of the boys in the class went to a junior executive in a nearby company and honored him for helping him with his career planning. He gave him a blue ribbon and put it on his shirt.
Then he gave him two extra ribbons, and said, "We're doing a class project on recognition, and we'd like you to go out, find somebody to honor, give them a blue ribbon, then give them the extra blue ribbon so they can acknowledge a third person to keep this acknowledgment ceremony going. Then please report back to me and tell me what happened."
Later that day the junior executive went in to see his boss, who had been noted, by the way, as being kind of a grouchy fellow. He sat his boss down and he told him that he deeply admired him for being a creative genius. The boss seemed very surprised. The junior executive asked him if he would accept the gift of the blue ribbon and would he give him permission to put it on him. His surprised boss said,"Well, sure."
The junior executive took the blue ribbon and placed it right on his boss's jacket above his heart. As he gave him the last extra ribbon, he said,
"Would you do me a favor? Would you take this extra ribbon and pass it on by honoring somebody else? The young boy who first gave me the ribbons is doing a project in school and we want to keep this recognition ceremony going and find out how it affects people."
That night the boss came home to his 14-year-old son and sat him down. He said, "The most incredible thing happened to me today. I was in my office and one of the junior executives came in and told me he admired me and gave me a blue ribbon for being a creative genius. Imagine. He thinks I'm a creative genius."
Then he put this blue ribbon that says "Who I Am Makes A Difference" on my jacket above my heart. He gave me an extra ribbon and asked me to find somebody else to honor.
As I was driving home tonight, I started thinking about whom I would honor with this ribbon and I thought about you. I want to honor you.
"My days are really hectic and when I come home I don't pay a lot of attention to you. Sometimes I scream at you for not getting good enough grades in school and for your bedroom being a mess, but somehow tonight, I just wanted to sit here and, well, just let you know that you do make a difference to me.
Besides your mother, you are the most important person in my life. You're a great kid and I love you!"
The startled boy started to sob and sob, and he couldn't stop crying. His whole body shook.
He looked up at his father and said through his tears, "I was planning on committing suicide tomorrow, Dad, because I didn't think you loved me. Now I don't need to."

BLUEBERRY CREAM CHEESE SQUARES!

BLUEBERRY CREAM CHEESE SQUARES

This delectable dessert is the perfect summer treat, NO baking required.

INGREDIENTS:

1/4 c. cornstarch

1/2 c. sugar

1/2 c. water

3 c. blueberries, rinsed and drained

1 (13 1/2 oz.) pkg. graham cracker crumbs

3/4 c. melted butter 2 (8 oz.) pkg. cream cheese

1 1/2 c. sugar 2 tsp. vanilla extract

1 (9 oz.) pkg. frozen whipped topping, thawed

DIRECTIONS:

Combine cornstarch, sugar, water and blueberries in saucepan. Cook over medium heat, stirring until thickened; cool. Combine cracker crumbs into bottom of foil-lined 13 x 9 x 2 inch pan. Mash cream cheese until soft; beat in sugar and vanilla gradually. Fold in whipped topping; drop by spoonfuls over crumb mixture. Spread gently with spatula. Spread blueberry filling evenly over cheese mixture; spread with remaining cheese mixture. Sprinkle with remaining crumb mixture; chill overnight. Use foil to remove dessert from pan. Place dessert on platter;cut into squares.

LAVENDER SUGAR WITH VANILLA

This is wonderful just to open and sniff! Make four jars one with lavender and sugar put into a vita mix to make into lavender powdered sugar(Which is nice if you don't want lavender buds in your baking. Or to add to a cup of comforting tea), then jar two with lavender and the fourth put in a vanilla bean. Can be used in cake or cookie mixes, a cup of tea, in a frosting or glaze, salad dressing or just take a sniff every now and again! A great way to make the summer stay a little longer! You can also make the lavender jelly with it! Makes a great gift.

INGREDIENTS:

4 cups sugar
4 tablespoons fresh lavender flowers
1 vanilla bean (optional)

DIRECTIONS:

Place a cup of sugar in each (1 cup) jar along with 1 tablespoon lavender and divide the vanilla bean among some or all the jars. Let sit overnight.

PINEAPPLE BLUEBERRY CRUNCH CAKE & PRAIRIE CHURCH DOLLS ROLL

PINEAPPLE BLUEBERRY CRUNCH CAKE


This recipe actually takes only 5 minutes to make and it is delicious! I served mine with Cool Whip!
We called this a Dump Cake, but used Cherry Pie Filling. Try it using Peach Pie Filling or half Blueberry and half Cherry OMG that is good.

INGREDIENTS:
3/4 cup butter, plus more for dish
1 (20-ounce) can crushed pineapple, in juice
1 (20-ounce) can blueberry pie filling
1 (18.25-ounce) box yellow cake mix
1 cup chopped pecans

DIRECTIONS:

Preheat oven to 350 degrees F. Butter a 13 by 9-inch casserole dish. Melt 3/4 cup butter in saucepan over low heat. Pour the pineapple with juice into the casserole dish and evenly spread blueberry pie filling on top. Cover with dry yellow cake mix and top with pecans. Drizzle with meltedbutter and bake for 35 to 45 minutes.

ANGEL LUSH, STRAWBERRY SHORTCAKE & MAKE YOUR OWN PAPER!

I don't know what is happening to my posting on my blog, but this is what I have been getting, so this is the reason I haven't been posting. Any one know what is wrong????? If so please let me know.

I like trying new crafts, but am not always able to invest in all the supplies....so this is a groovy way to make paper with stuff you probably have on hand (or can acquire for next to nothing! If this is the first time you are making paper, don't be afraid to experiment with different fibers, you don't have to stick with paper related products. Add whole flower heads to the pulp mixture after it has been through the blender. You can add scraps of yarn, tin foil, even seeds. Its all comes down to what you want. Experiment with different textures and colors after all Ts'ai Lun did! Remember, some of your ideas will turn out while others may not. Have fun with it, express your creativity.. Instructions


Things You’ll Need: Gather supplies: blender white glue water panty hose wire hanger sink and of course paper... Many types of paper that can be used include: Computer Paper (unprinted) Newspaper (If you want a grayish colored paper) Magazines Egg Cartons Old Cards (For heavier paper) Toilet Paper Paper Bags Non Waxed Boxes (Pre-soak in warm water) Office Paper Tissue Paper (For finer paper) Typing Paper Napkins Construction Paper Step1 Create the drying screen before you begin. You can create a drying screen by shaping the wire hanger into a square or rectangle. Stretch the panty hose over the wire being careful not to snag them. You will need a screen for each piece of homemade paper you plan to make. Step2 Tear up your old paper. I shred it with a paper shredder. What I don't use to make new paper is used for garden mulch. You can also tear the paper into 2 inch, or smaller, squares. Step3 Add water and blend. Place your paper in the blender. Cover it with water. Allow it to sit and soak up some of the water. Add more water to keep the water level about an inch above the top of the paper. Adding enough water is important to keep from over working your blender! Run the blender on low speed. Once you have grey liquid, blend a few more minutes. When you are finished, the original paper should be completely broken down. Step4 If you want colored paper, add a few drops of food coloring. Blend until the color is distributed evenly. I enjoy the natural off-white color of the paper with small specks of color from any colored paper in the mix. You can also get creative in this step and add natural elements such as sticks, shells, or flowers. Step5 Give your blended pulp a glue bath. Fill your sink with 4 inches of water. Add 2 tablespoons of glue to the water. Dump the contents of your blender into the sink full of glue water. Use your hands to mix it up. Make sure it is mixed well. Step6 Strain your homemade paper. Place your screen at the bottom of the sink. Wait a few seconds and then very slowly begin lifting the screen. You should lift as slowly as possible, taking at least 30 seconds to lift it from the water. Step7 Dry your new paper. Take your screen outside and dry it in the sun. It should be completely dry before you try to remove the paper. Very gently pull the paper off. To speed dry your homemade paper, you can try putting it in the oven on a very low heat setting. Just be careful not to set the oven temperature too high. You would not want to catch your homemade paper on fire! Step8 Iron your new paper (optional). You can iron the homemade paper if you wish. This will remove the wrinkles. If you do this, be careful not to scorch it with the iron. Step9 Make something pretty from your homemade paper. You can make special notes, cards, use it in scrapbooks or other paper crafts, or make a book cover out of it. NOTES: It's fun to add bits of thread and flowers and seeds, etc While your paper is drying you could lay it over an overturned bowl and it will dry into a bowl shape...



Strawberry Shortcake:



Super easy and very good 1 cup milk, divided ¼ cup sour crème 3 tbsp. sugar 2 ¼ cups dry all-purpose baking mix for biscuits (I used Bisquick) 1 pkg. (4-serving size) instant vanilla pudding and pie filling mix 1 tub (8 oz.) whipped topping (Cool Whip) 4 cups sliced strawberries 1/3 cup sugar Preheat oven to 425F. Mix ½ cup milk, sour crème and 3 tbsp sugar in large bowl with wire whisk. Stir in baking mix until blended. Spread evenly into greased 9-inch round cake pan. Bake 12-15 minutes until golden brown. Remove and let cool completely on wire rack. Meanwhile, combine dry pudding mix and remaining ½ cup milk; blend well. Gently stir in half of whipped topping until well blended. In a separate bowl mix strawberries and 1/3 cup sugar; set aside. Slice cake in half horizontally to make two layers. Place bottom of cake on serving plate. Spread pudding mixture evenly over bottom layer (saving a large spoonful of pudding mix); evenly layer half of strawberries on pudding layer; put leftover large spoonful of pudding mixture in center of strawberry layer; place top cake layer on top, press down gently. Spread top with remaining whipped topping and top with remaining strawberries...



Angel Lush with Pineapple:


This is the perfect dessert for when you just want something light. The hardest part was cutting the angel food cake! This is super easy to prepare but looks and tastes great! I hope you enjoy. Ingridents: 1 can (20 oz.) DOLE® Crushed Pineapple, undrained 1 pkg. (4 serving size) JELL-O® Vanilla Flavor Instant Pudding & Pie Filling 1 cup thawed COOL WHIP® Whipped Topping 1 pkg. (10 oz.) prepared round angel food cake Seasonal Berries Directions: Mix pineapple and dry pudding mix in medium bowl. Gently stir in whipped topping. Let stand 5 minutes. Cut cake horizontally into 3 layers. Place bottom cake layer, cut side up, on serving plate. Spread 1-1/3 cups of the pudding mixture onto cake layer; cover with middle cake layer. Spread 1 cup pudding mixture onto middle cake layer; top with remaining cake layer. Spread with remaining pudding mixture. Refrigerate at least 1 hour or until ready to serve. Garnish with your favorite seasonal berries. Store leftover dessert in refrigerator. Great Substitute: Prepare as directed, using JELL-O Vanilla Flavor Fat Free Sugar Free Instant Reduced Calorie Pudding & Pie Filling and COOL WHIP LITE Whipped Topping. How To Cut the Angel Food Cake: Use a serrated knife and gentle sawing motion to easily cut the angel food cake.

TURKEY BACON & HASH BROWN BAKE

Eggs, turkey bacon, hash browns and cheese make a simple, but impressive dish for a weekend family brunch. Made this Sunday, but used regular thick sliced bacon. The thick sliced bacon nowadays is what regular sliced was a few years ago.

INGREDIENTS:

4 Cup(s) Ore Ida Country Style Hash Browns

1/2 Package (12 oz.) BUTTERBALL® TURKEY BACON or about 12 slices, cut into 1/2-in. pieces

1/4 Cup(s) VEGETABLE OIL

1 Package (10 oz.) FROZEN CHOPPED BROCCOLI or about 2 cups, thawed*

1 Cup(s) CHOPPED ONION

1 Cup(s) CHOPPED RED BELL PEPPER

8 EGGS

1 Cup(s) CANNED FAT FREE EVAPORATED MILK

1/2 Teaspoon(s) SALT

1 1/2 Cup(s) SHREDDED SHARP CHEDDAR CHEESE

DIRECTIONS:

Preheat oven to 350°F. Coat 13x9 baking dish with nonstick cooking spray.

In a large skillet over medium heat, cook bacon for 4 to 6 minutes, or until lightly browned, stirring occasionally.

Meanwhile, heat oil in another large skillet over medium high heat. Cook Hash Browns for 2 minutes, turn over and cook for another 2 minutes, or until lightly browned. Add broccoli, onion and pepper, and cook for 3 to 4 minutes, stirring occasionally. Transfer evenly into baking dish. In a medium bowl, whisk together eggs, milk and salt, and stir in cheese and cooked bacon. Pour evenly over potato mixture. Bake uncovered for 40 to 45 minutes, or until eggs are set. Allow to rest for 5 minutes before serving. If desired, substitute chopped broccoli with fresh asparagus, cut into 1-in. pieces.

Lemons/Limes are on sale 4 for a $1. What a good buy, but what to do with them all. It isn’t a good buy if you end up throwing some of them out. Well here is the answer to that problem!

PRESERVED LEMONS OR LIMES

INGREDIENTS

2 to 3 lemons or limes

2 tablespoons kosher salt

DIRECTIONS:

Preheat the oven to 250 degrees F. Cut the lemons into sixths, lengthwise, sprinkle with the salt and place in a non-corrosive dish (glass is good). Cover the lemons with water and cook in the oven for 3 hours. Allow to cool and then refrigerate. Cook's Note: The lemons can be refrigerated for up to 6 months as long as they are covered and stored in a glass canning jar. HOMEMADE LEMON PEPPER SEASONING MIX

Lemon pepper adds a piquant flavor when used on grilled meats. Commercial lemon-pepper seasoning, available in the spice section of most markets, is enormously popular as a seasoning for chicken and other foods. You can easily make it at home yourself, and the result will taste much bolder and fresher.

INGREDIENTS:

1 fresh lemon

2 tsp. whole black peppercorns

DIRECTIONS:

Remove the zest from the lemon carefully, using a zesting tool or a vegetable peeler. Remove only the yellow zest and none of the white pith. Mince the zest and place it in a small bowl. Place the peppercorns on a cutting board and crack them by pressing on them with the clean bottom of a heavy pot, or whirl very briefly in a spice grinder - you want them in large pieces. Add the cracked pepper to the zest. Don't forget this key step: Use a wooden spoon or other sturdy tool to mash the cracked pepper and zest together. This helps release the citrus oils in the zest and combine them with the pepper. Spread the zest and pepper on a small baking sheet or piece of foil and place in the oven. If it's a gas oven, leave it in the oven overnight and the pilot light will dry the mixture out. If it's an electric oven, set it to 200 degrees F or so. Pulverize the mixture the next day in a spice grinder or clean coffee grinder. You can also mince it by hand with a knife. It's now ready to sprinkle on chicken, fish and other foods before cooking.


GRILLED LEMON CHICKEN

INGREDIENTS:

1/4 cup fresh lemon juice

1/4 cup extra virgin olive oil

2 teaspoons Lemon Pepper Seasoning Mix

6 chicken cutlets

DIRECTIONS:

Heat the broiler or grill.

In a low, flat dish stir together the lemon juice, oil and Lemon Pepper Seasoning Mix. Add the chicken breasts, and marinate in the refrigerator for 30 to 45 minutes. Grill over hot coals or broil for 4 minutes on each side, or until done. Serve hot or at room temperature.

BUNNY CREAM PUFFS


These delightful cream puff bunnies will make young and old smile. They taste great too!


INGREDIENTS:


Cream Puffs


1 cup water


1/2 cup butter


1 cup all-purpose flour


4 eggs



Filling


1 (3.3-ounce) package white chocolate instant pudding and pie filling mix


1 1/4 cups cold milk


1 cup whipping cream, whipped


Decorations


Large marshmallows


Decorator sugar Toothpicks


Vanilla-flavored candy-coating (almond bark), melted


Mini semi-sweet chocolate chips


Black string licorice, cut into thin 3/4-inch strips


Small round pink candies, such as mini candy-covered chocolate pieces


Powdered sugar, if desired


DIRECTIONS:


Heat oven to 400°F. Combine water and butter in 2-quart saucepan. Cook over medium heat until mixture comes to a full boil (4 to 7 minutes). Reduce heat to low; stir in flour vigorously until mixture leaves sides of pan and forms a ball. Remove from heat. Beat in 1 egg at a time until mixture is smooth.


Drop dough by 1/4 cupfuls, 3 inches apart, onto ungreased baking sheet. Bake for 35 to 40 minutes or until puffed and golden brown. Pierce each puff gently with fork to allow steam to escape. Cool completely. Prepare pudding mix, using 1 1/4 cups milk, as directed on package. After pudding is set, gently stir in whipped cream. Cover; refrigerate until serving time.


To create bunnies, cut off cream puff tops. Cut large marshmallows crosswise into 3 pieces. Dip cut-sides into decorator sugar for ears. Using toothpicks, attach sugared marshmallows into top of cream puff for ears. Use melted candy coating to attach chocolate chips for eyes. Just before serving, fill bottom half of cream puff with 1/3 cup filling. Press licorice strips for whiskers and pink candies for nose into filling. Place decorated cream puff top over filling. Sprinkle with powdered sugar, if desired.
